Description:
This one is filled with soluble fiber & antioxidants. It’s easy to prepare & looks colorfully appetizing.
A word of caution!! Always check for the freshness of mushrooms being used.
For those with Kidney disease this recipe is recommended because, it's low in protein, potassium as well as sodium. However, please do seek approval from your physician as well.
Ingredients:
Cooked bulgur - 200 g (2 Cups)
Button mushrooms - 10 Nos.
Onion, Big - 1
Ginger-garlic paste - 1 tbsp
Spring onion - 2
Pepper powder - 1 tsp
Minced Green chilies - 1 tbsp
Soy sauce (Use the low sodium variety, if possible) - 1 tsp
Salt – ¼ tsp when cooking bulgur (Go light on salt since soy sauce is also used)
Canola oil - 1 tbsp
Method:
1. Slice Onions. Cut Mushrooms into 2 pieces each. Chop the spring onions finely.
2. Saute the ginger-garlic paste & the onion in a saucepan.
3. When the onions become transparent, add the mushrooms & sauté well. Add the minced chilies, soy sauce, pepper powder & salt & cook further for 2 minutes.
4. Finally add the spring onions, cook for another minute & then add the bulgur & mix well.
5. Serve hot.
