
Southern Fried Corn
Ingredients:
• 2 cups fresh corn kernels, about 6 ears
• 2 tablespoons butter
• 1/2 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
• sugar, optional
Preparation:
Heat butter in a skillet and add the fresh corn kernels. Cook for 15 minutes, stirring frequently. Make sure that the flame is keplt low. Sprinkle with salt and pepper. Taste and adjust seasoning, and add about 1 teaspoon of sugar if desired.
Scrambled Corn
Ingredients:
• 3/4 cup finely chopped onion
• 1/4 cup pepper powder
• 3 tablespoons butter
• 5 cups fresh corn kernels
• 1/2 cup light cream
• 1 teaspoon salt
Preparation:
Sauté onion and pepper in butter until onion is barely wilted. Add corn, cream and seasonings. Cover and simmer for 15 minutes.
Masala Corn
Ingredients:
• 1 corn
• 1 small bowl of pudina
• 1 small bowl of coriander
• 2,3 chillies
• 1 lemon
• salt to taste
Preparation:
Boil the corn first and remove each corn and keep it in a bowl. Grind pudina, chilli & coriander. Add this to corn, then add salt for taste and mix it well.Add a tsp of lemon and serve.
