Description:
Tofu, commonly known as soy paneer, is a good source of protein for vegetarians. It is high in calcium and thus, helps in protecting against osteoporosis. Soy products also mimic Estrogen (the female hormone) in the body, and therefore should be a part of the diet of all post-menopausal women, in moderation.
Ingredients:
Cucumber 3 medium sized
Tofu 100 gm (cut in squares)
Bean sprouts 100 g
Oil 1 tsp
Celery leaves to garnish
Salt to taste
For the dressing:
Onion 1 (grated)
Garlic cloves, 2 (crushed)
Chili sauce 1 tsp
Soy sauce 2 tbsp
Vinegar 2 tbsp
Brown sugar 2 tsp
Method:
1. Cut the cucumber into cubes. Keep aside.
2. Heat the oil in a pan and roast the tofu on both sides until golden brown. Drain on paper.
3. To make the dressing, shake together the onion, garlic and chilli sauce in a jar. Stir in the soy sauce, vinegar, sugar and salt to taste.
4. Toss the cucumber, tofu, bean sprouts together in a serving bowl.
5. Garnish with celery leaves and serve immediately.
Tip: Learn to use any salad dressing sparingly. Use only as much as you need. When you order a salad at a restaurant, ask for the dressing on the side, and then use only minimal dressing while eating.
