1. Beguni - Eggplant fry
- 1/2 cup Bengal gram flour
- A small quantity of red chilli powder
- 150 gm (4-5) Eggplant longitudinally cut into slices, with the stem attached
- Salt to taste
Mix Bengal gram flour with water to create a batter. Add a little salt for taste. Dip eggplant slices in the batter to coat and add a little red chilli powder on each side. Deep fry in very hot oil until crisp, drain on kitchen towel. Serve piping hot.
